Smothered Pork Chop Recipe

Pork chops are a cheap and delicious cut of meat that often go overlooked. They are a great alternative to chicken when you just want something different. This smothered pork chop recipe makes great use of this underutilized ingredient.

This recipe does have some upfront prep work that needs to be done, but it will be cooked in a slow cooker. That means come dinner time, your meal will be ready to eat!

Ingredients For My Smothered Pork Chop Recipe

  • 2-3 bone-in pork chops
  • 1 can cream of mushroom soup
  • onion
  • rice
  • garlic powder
  • onion powder
  • salt and pepper
  • butter

Prep

Gather all of your spices. Open the pack of pork chops and lay them out across a plate or cutting board. Generously season both sides of the chops with salt, pepper, garlic, and onion powder. I listed bone-in pork chops because they will give the dish more flavor. You can go with boneless chops if you prefer.

Seasoning smothered pork chops

Get your onion and get to choppin’! I like to cut my onion into roughly 1/4 inch pieces, but you can go with whatever size you like in your dish. You can even cut them into strips.

How To Cook Smothered Pork Chops

Get a stainless steel pan or cast-iron skillet on medium-high heat. Toss in a knob of butter when the pan is hot. Next, place your pork chops into the pan and sear them for 2-3 minutes. Flip the chops and repeat the process. Make sure both sides have a good sear. Don’t worry about cooking the pork chops all the way through.

When the pork chops are done, remove them from the pan and set them aside. Toss another knob of butter into the pan and follow that up with the diced onions. Give them a quick saute. When they are ready, set them aside with the pork chops.

Searing pork chops

While the pan is still hot, add a bit of water to it. Using a wooden spoon or spatula, scrape the bottom and get the sear bits to come up. Stir and reduce the liquid by about half, which should only take a couple of minutes—Reserve this liquid, as we will be using it in a bit.

Grab your favorite slow cooker and set it up. Open your can of cream of mushroom soup and empty half of it into the slow cooker. Next, add about half of the liquid to the pan we made earlier. Mix the two ingredients together.

Once you have the bottom of the slow cooker coated, add the pork chops and sauteed onions. Cover them with the remaining cream of mushroom soup and the last bit of liquid from the pan. Season with salt and pepper, and give it a good mix.

The final step is to seal the slow cooker and turn it up to high. Depending on the thickness of your pork chops, they should take around 4 hours to cook. All you have to make at dinner time is the rice to serve the chops over!

I usually serve my smothered pork chops over rice. However, mashed potatoes make an excellent alternative. You can also serve them over other pureed root vegetables, such as sweet potatoes or rutabagas.

I typically serve at least one other side with this dish. Green beans are one of my favorites, spiced with garlic and onion powder, and a little brown sugar. Southern-fried cabbage is another great option. Turnips and collards will work as well.
