Meals in the slow cooker are great for busy nights. We recently tried a new one that has become a quick favorite. Today I’ll be sharing our crockpot sausage and potatoes recipe!

Prep For Crockpot Sausage and Potatoes

Prep for this slow-cooker recipe is simple. Start by washing your potatoes. Once clean, dice them into even-sized cubes. The size is totally up to your preference. As long as they are evenly sized, they should all cook at the same time.

Once the potatoes are cut, it’s time to dice the sausage. Like the potatoes, this all comes down to preference. I like quarter-inch-sized medallions, but any size will due. You can even leave the sausage in longer links if you prefer.

The final step of prep is to gather your seasonings and open the can of green beans. Be sure to drain any liquid off the green beans to get rid of the metallic can taste.

Cooking Crockpot Sausage And Potatoes

With prep out of the way, it’s time to cook. Technically, you could just throw everything into the slow cooker and call it a day. However, I’m going to go over the steps to kick this dish up a notch.

Get a pan going on medium-high heat. Once the pan is up to temperature, add the sausage. We want to give the meat a nice sear, but it doesn’t have to be cooked all the way. The slow cooker will finish things off.

Once the sausage has some color on it, take it out of the pan. Add a little bit of water, lower the heat, and deglaze the pan. You need just enough water to get up any bits of sausage left behind.

The next step is to get everything in the slow cooker. I start with the potatoes and season them well before adding anything else. Following the potatoes will be the green beans and sausage, which will also be seasoned. We also want to add a bit of sauce we just made by deglazing the pan, around a half a cup. The last step is to add in your butter and turn on the slow cooker.

The setting you choose will be determined by how quickly you want the meal. Set the temp to high if you want the dish done in less than 5 hours. If you have all day, you can set it to a lower setting. You don’t want to set the slow cooker to high if you start the dish first thing in the morning, or the potatoes will turn to mush.

The green beans and sausage will cook quickly. Once the potatoes have reached your desired tenderness, the dish is complete!

Side Options

The wonderful thing about this dish is that it has built-in sides. The sausage covers your protein, the potatoes have the starch, and the green beans cover your vegetable. The dish can be eaten by itself and will leave you feeling fulfilled.

Since your greens and potatoes are covered, I’d opt for something like black eyed peas if you are looking for an additional side. Lima beans would also be a good option.

Ingredients

  • 1 pack sausage
  • 4-6 ea potatoes
  • 1 can green beans
  • 1 tbsp italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt and pepper
  • 2 tbsp butter

Instructions

  • Dice sausage and potatoes into even sized portions.
  • Sear sausage over medium high heat.
  • Deglaze the pan and reserve the sauce.
  • Add diced potatoes to slow cooker and season well.
  • Pour some of the deglazed sauce into the bottom of the slow cooker.
  • Add sausage and green beans, season well and mix all ingredients together.
  • Cook for 4-5 hours until potatoes are fork tender.
