I came up with my cheesy chicken casserole recipe by accident. My son wanted to try some squash casserole. He loved it until he got to the squash It was then that I got the idea to take out the squash and add chicken instead!
Ingredients
- Chicken flavored stuffing, 1 box
- Sour cream, 1 tub
- Cream of chicken, 1 can
- Chicken breast
- Chicken crackers
- Shredded cheddar, 1 cup

Prep
Prep for the cheesy chicken casserole is simple. The chicken breast needs to be seasoned well. I usually go with onion powder, garlic powder, salt, and pepper. Season both sides and get a pan heating on medium-high heat. Alternatively, you can cut the chicken breast before cooking and season the chopped chicken.

Once the pan is up to temp, sear the chicken breast on both sides. Cook until done and the internal temperature is 165 degrees. Let rest for about 5 minutes and then dice into even-sized cubes. If you precut your chicken, it will cook a bit faster.
Next take the chicken crackers and crunch them up. They don’t need to be powder, but you want them smashed into small pieces. Gather the remaining ingredients and you are ready to begin cooking!
Making The Cheesy Chicken Casserole
Preheat your oven or air fryer to 350 degrees. While the oven is preheating, fetch a large mixing bowl and a good mixing spoon. You will also need a large casserole dish.
Add all of your ingredients except the shredded cheese to the mixing bowl. You can optionally add some extra shredded to the mixture. Mix everything together well.

Spray your casserole dish with cookin spray. Pour the mixture from the bowl into the casserole dish and smooth it out with a spatula so you get an even cook. Cover the top evenly with the cup of shredded cheddar.
When the oven comes to temperature, cook the casserole for approximately 30 minutes. After 25 minutes you are really just trying to get the cheddar on top melted to your liking. Once it is, your casserole is done!
Sides And Alternatives
This cheesy chicken casserole recipe can be used as an entre or a side. Alternatively, you can sub out the chicken for squash and onions for a delicious squash casserole recipe! The squash casserole version is a staple of Thanksgiving and Christmas dinners at our home.
If you use it for an entre, salad makes a great side. Any type of greens, such as collards or turnips, also make good sides for the dish.
I would avoid starches such as rice or potatoes since there is stuffing in the casserole. Aside from greens and salad, you could opt for green beans or corn.
