Chicken pot pie is a dish that came to me later in life. While I had, of course, heard of it, I never cared for it in my younger days. I grew to love it as an adult, and it is now one of my favorite chicken dishes. Today, I want to share with you my super simple chicken pot pie recipe.
This is the best chicken pot pie recipe for a quick delicious dinner. Though it has a two-step process, neither process takes very long. I think you’ll enjoy this simply scrumptious pot pie.
Ingredients
- 2 chicken thighs or breasts
- ready to bake pie crust
- 1 can cream of chicken
- 1 can of mixed vegetables
- salt and pepper
How To Make Chicken Pot Pie
First, we have to cook the chicken. Since this is a super simple recipe, we are not going to bother searing the chicken like in some of my other recipes or chopping vegetables for a mirepoix. We just want to gently simmer the chicken until it is cooked all the way through. You don’t want to overcook it, however, as that will make the chicken tough.
The cut of chicken you use is totally up to your preference. I listed chicken thighs because they are flavorful and cheap. You can just as easily use chicken breasts or chicken tenders.
Once the chicken is done, set it aside to cool. You can discard the broth. We won’t need it to flavor our pie filling, as we are using the cream of chicken soup. While your chicken is cooling, open the cans of soup and mixed vegetables and dump them into a mixing bowl. Next, combine until the vegetables are dispersed evenly.
Once your chicken has cooled sufficiently, shred it into chunks and add it to your soup mixture. Mix well. With the chicken integrated, the filling is complete!
Baking
Spray your pie pan with cooking spray to prevent your crust from sticking. The ready-to-bake pie crust should come in 2 pieces, one for the top and one for the bottom. Line the bottom of the pie pan with one of the pie crust sheets. You must make sure it is spread flat against the bottom.

Lastly, place the chicken pot pie into a 350 oven and cook for about 30 minutes, or until the top pie crust is golden brown. You can spread some melted butter on top in the final 10 minutes to help the process. Your chicken pot pie is now complete!
