Instructions
Peel and slice potatoes into thin slices.
Dice onion into the size and shape of your liking.
In a deep sided skillet, fry bacon on medium-high heat until fat is rendered.
Add potatoes and onions to the skillet. Lower the heat to medium-low.
Generously season the potatoes with salt and pepper.
Cover the potatoes and cook for 35-45 minutes, until the potatoes are soft. Stir occasionally.
