Ribs are one of the most popular BBQ dishes around. When done right, they are absolutely amazing. Three important elements to making delicious ribs include time, technique, and the rub. Today I’m going to share my basic rib rub recipe.
Although we are talking about ribs today, this rub goes great with any kind of pork. It is fantastic for pulled pork.
Ingredients:
- 1 tablespoon salt
- 1 tablespoon pepper
- 1/2 cup brown sugar
- 1 tablespoon garlic powder
- 1/4 cup paprika
- 1 tablespoon onion powder
- 1 tablespoon chili powder
The Rub
This rub can be mixed together ahead of time and stored for future use. There is nothing here that is going to go bad. I try and save old spice containers and use them to store my various spice mixes. Along with rib rubs, I generally keep blackening seasoning on hand at all times.
It is generally a good idea to let your ribs rest with the rub on it for a couple of hours. Overnight is even better. Don’t forget to remove the silver skin membrane from the bottom side of the ribs so the rub can get through to the meat.
As the title indicates, this is a basic rub. It will add sweetness and a bit of flavor, but it doesn’t overpower the pork flavor of the ribs, or the smoke if you use any. Combined with a good sauce, you can make delicious ribs with this mix.

More Rib Rub Ideas
This basic rib rub recipe is expandable. These base flavors will not clash with other spices should you want to add them.
One popular addition is cayenne pepper. This choice would obviously add a bit of heat to your ribs. Another common spice in rib rubs is cumin. If you like that distinctive flavor you taste in many Tex-Mex dishes, you’ll like cumin on your ribs.
Experiment! Try different combinations over time and see what you like best. I’ve played around with allspice to good effect.
Just don’t fall into the trap of throwing everything in your spice rack into the mix. I admit I was guilty of this once upon a time myself. Try and find combinations that go well together. Don’t waste your spices.
